Maybe for the first time in years, I am blogging about something mere minutes after I finished making it. After all, Easter weekend is fast approaching and if I want to be of any inspiration, I should hit “publish” on this post before the grocery stores are closed. Am I right? So, here we are. I figured this would be something I could make with the kids as an Easter activity. My 5-and-a-half year old helped me mix the ingredients for the coconut macaroons and then both he and my 2-year-old helped me decorate the nests with the candy eggs.   Whenever Easter rolls around and Cadbury Mini Eggs hit the store shelves, I buy a pack or two because I love to incorporate them into my baking. So when I saw the recipe on Sophistimom, I knew I had to try to make these just because they were so utterly adorable.Besides, one of my most popular blog posts to this day is the one on my Easter egg nest cupcakes, which you can read here. But these marshmallow nests are decidedly better. For one, they’re less work. Secondly, they’re more portable, making it ideal for those Easter brunches that are already chock-a-block full of coloured eggs. Or perhaps these would also make a charming favour for a baby shower party with a hatching-chick theme.   This is the latest creation for Frost and Fete, the Etsy shop my sister and I launched recently. When my mother and sister hosted my bridal shower, their hunt for cupcakes became a bit of a family joke as it literally spanned weeks. I wish this solution had presented itself to us – cupcake toppers that would fit the decor and theme of the party. It would have been much easier to top plain old cupcakes than to search for the perfect cupcakes covered in piped flowers. Plus, we could have saved the toppers for another event. No matter though.   I know it’s a bit early to be making Easter-themed cupcakes but ever since I saw the Cadbury eggs perched atop cupcakes in one of my books, I’ve been dying to make my own version. I got the idea for the toasted coconut from Williams Sonoma’s version of Easter cupcakes, I thought it would be more realistic looking than coloured butter cream. Another great idea would have been to use kataif, a shredded wheat-material type of Middle Easter dessert, which food blogger extraordinaire Shuna Fish Lydon recommended over Twitter. Alas, I had lots of flaked coconut on hand so that’s what I used. For those who are wondering, the cupcakes are lemon-flavoured, with lemon butter cream.
