Maybe for the first time in years, I am blogging about something mere minutes after I finished making it.
After all, Easter weekend is fast approaching and if I want to be of any inspiration, I should hit “publish” on this post before the grocery stores are closed. Am I right?
So, here we are. I figured this would be something I could make with the kids as an Easter activity. My 5-and-a-half year old helped me mix the ingredients for the coconut macaroons and then both he and my 2-year-old helped me decorate the nests with the candy eggs.
Even if you don’t make it to the grocery store in time, there’s a good chance you have these ingredients on hand if you are an amateur baker. Here’s the recipe, it’s a good one. As I started writing this blog post, I was reminded that I had made something similar years ago, which turned out to be a hugely popular blog post so if you want to revisit it, here’s the link. These coconut macaroons turned out really well. I’m always skeptical because if the recipe is even slightly off they will fall apart but these held together beautifully, even when I transported them off the cookie sheet.
I did wonder if I should have tried to melt the Nutella, even slightly, to let it spread more easily and to give it that glossy sheen. However, even though I let the macaroons cool down for about five minutes, the slight heat they imparted also melted the Nutella just enough. Be warned, after you place the eggs (gently, gently), the Nutella is likely to still be a little loose due to melting so it may spread more than you expect if you are not careful.
Substitutions: None. Although I bought two bags of candy Easter eggs in varying sizes as a little bit of variety is always a good thing. In case you’re wondering, I used Kosher salt rather than plain table salt, even though neither kind was specified.
Would I make this again? This was so easy and took no time at all, so I can see this becoming a yearly tradition around here. Also, my boys felt as if they participated and I didn’t feel like I neglected them, so #ParentingWin. The recipe said there would be about 10 nests but I had more like 14 so there was plenty to go around.
Grade: Five stars out of five. The cute factor is off the charts, which is exactly what I am looking for when it comes to holiday-time activities with the kids.
