No-bake funfetti cheesecake

I’ve been holding on to this blog post for months. Many many months. Has it been more than a year? Perhaps.
The reason why I’m torn is because while I was making this for a dinner for my mom I was convinced it would be a huge hit. Sprinkles, cheesecake, funfetti! Plus, we wouldn’t feel guilty eating it. What could go wrong? But instead, it was kind of… meh.
Even now, looking at the recipe, I’m surprised to remember just how underwhelmed I was. I should have either served the real thing, or served a fruit salad. I’m an all or nothing kind of gal.
Here’s the thing: if you are going to make this, you can’t really think of it as cheesecake. If you are on a diet, and have a serious hankering for cheesecake, this recipe may help nip that in the bud for you.
But if it was me, I’d rather have a teeny-tiny piece of the real thing.
It is rather pretty, though, isn’t it?
Substitutions:
You can likely use graham cracker crumbs instead of the Oreo crumbs. I think I might tone it down on the almond extract, I think it gave mine a bit of a sweetener-type taste I sense whenever I try something with aspartame.
Would I make this again?
Nope. However, I do like the presentation and I might try to use some of those ideas involving something a bit more indulgent.
While this recipe was not my favourite, the blog has some other ideas I’m tempted to try so you may see me giving those a bit of a whirl…
Grade:
Three stars out of five. If there was no funfetti involved, it might have less.
