  For me,  nothing says summer more than a fruit pie. Still, in the summer I like to be out and about instead of sweating over the perfect pie crust which is one of the reasons I prefer a crumble to a pie covered with crust. While farmers’ markets in our area often carry amazing pies made from their own produce, I can’t always find the one pie that I really hanker after – cherry pie.   Sometimes, admittedly, I feel lazy. My friends and family may tell you I’m definitely not lazy because I’m always on the go, but sometimes I just don’t feel like seeing a recipe through. So I take shortcuts. Case in point: During my quick stop at Trader Joe’s in Boston, one of the mixes I picked up was a brownie mix. In fact, it shouldn’t even be called a mix, because you didn’t have to add anything to it, just pour it into a brownie pan and bake. How amazing is that?   I’m always on the lookout for great-tasting frosting, which pipes well, and isn’t necessarily buttercream. I was in a bind one afternoon when I realized I had to make a quick frosting.  I needed to take photos of our Famous ‘Stache Movember cupcake toppers and wrappers for our Etsy shop Frost and Fete (see the entire set here) but I didn’t want to waste all my butter on making buttercream I didn’t even like. I quickly rifled through my well-loved edition of Martha Stewart’s “Cupcakes” and found something I hoped, and prayed would work out. The photo in the book didn’t reveal whether it would pipe beautifully or if it was just one of those slather and smear frostings.   If you love pumpkin, if you love chocolate, heck even if you just love cake, you will love this dessert. I found this recipe after doing some Googling to find a way to use up my leftover pumpkin puree. And I’m so very glad I took a chance on this revamp of the classic Italian dessert. Luscious, moist, delicate, the perfect combination of fall flavours. What can I say? I’m a big fan of this dessert.It came together rather easily, especially because it’s a no-bake recipe, as you will know if you’ve made tiramisu before. If you are a tiramisu purist, don’t be turned off. The pumpkin flavour works in harmony with the chocolate and almond-flavoured liqueur despite any apprehensions you might have.   I was inspired to make these cupcakes after seeing a variation of them in Martha Stewart’s cupcakes book I am always writing about. I had my sister-in-law over for lunch as I wanted to indulge her request for cupcakes with dulce de leche, which I’ve used as a filling before. I wanted to try something different, however, than the same old same old and I remembered seeing these in the book I mentioned (they also appeared in the February 2009 issue of Martha Stewart Living).So, rather than following the recipe in the book and making vanilla cream, which you can also find here, I decided to use dulce de leche instead. I’ll admit it was delicious, if a bit unorthodox, but perhaps too sweet for my taste.   I made these Devil’s food cupcakes with chocolate ganache frosting and salted caramel filling for my parents’ annual Christmas Day lunch from Martha Stewart’s “Cupcakes” books. You can also find the recipes for the cupcakes and the frosting through these hyperlinks to her website. Rather than topping the cupcakes with chocolate shavings as pictured in the book, I used shards of the hazelnut brittle I had made earlier.Substitutions:None, although I also used the salted caramel filling in these cupcakes though the recipe didn’t call for it. Would I make this again? Yes, especially the chocolate ganache. It was easy to make, had a lustrous sheen, and kept well in the fridge in an airtight container … even when I had to mix it again a couple of days later to top these cupcakes.
