Peanut butter extreme fluffernutter bars

It’s been ages – like months – since I’ve felt comfortable sitting down doing nothing. But my dishwasher is whirring, the kids have been fed, I have leftovers for dinner, tomorrow’s lunches are packed, my work clothes picked. I really don’t have any excuse not to sit down and enjoy my Fortnum & Mason Earl Grey tea while it’s still hot.

That’s a lie. I have a basket of laundry waiting to be folded. But I always have a laundry basket waiting to be folded. So I deserve this break, right?

In any case, I made this ages ago. And I forgot what the recipe was so I hemmed and I hawed and I delayed blogging about anything. But after doing some online sleuthing, I realized I found it. Here it is if you decide to make it, and I think you will.  I also realized that I had some residual resentment because it took me more time than I hoped to find the pre-made peanut butter cookie dough it called for.

But it doesn’t have to be that way. Just use some other cookie dough and add some peanut butter to it. Or make your own peanut butter cookie dough. This recipe is a classic, you just have to get it right, or it will either be too soft, or too crumbly. How do you do that? Trial and error, baby. At least that’s what it was for me when I first started making those peanut butter cookies when I was a kid.

Anywho. Anyone can make a rice krispie square, and I right? Well, these Butterscotch Fluffernutter Krispy Bars are the cool, rich, eccentric, aunt of those tired old rice krispie squares. These rice krispie squares would vintage Pucci and go snow tubing at the age of 70. These bars don’t give a damn about your calorie counting. In fact, these are so utterly delectable that you won’t want to make them too often because everything else will pale in comparison.

Disclaimer: You must like peanuts, otherwise, move along. Okay, okay. You can do without the peanut butter if you have an allergy. Try another nut butter if you can take it, if not, the butterscotch flavour will take charge admirably.

Substitutions: I think I covered all substitution angles quite nicely above. Just don’t use the holiday Rice Krispies cereal because, in my humble opinion, it will be ugly in this instance.

Would I make this again? Honestly, the photo is making me drool. And I might just make these tonight.

Grade: Five stars out of five. These aren’t your momma’s rice krispie bars. Also? Fluffernutter = five.
