One of my oldest childhood memories is my dad taking me to a bakery near our old apartment in Scarborough, Ont., when he bought bread on Saturdays, and treating me to a freshly baked blueberry muffin. I still remember the smell of the bakery and the taste of that warm muffin. This must be why I’m not a big fan of fruits in baked goods of any kind, but I’m a sucker for blueberry muffins. And whenever I’m having a particularly stress-filled morning, and need a bit of a quick comfort, I reach for a muffin. Greetings, readers. It’s been a while, I know. I’ve been back to work since the beginning of January and I’m still settling into the working-mom-of-two routine. Most days I’m up around 5, before running out the door to get to work around 6:30. Then the minute I return home, it’s full steam ahead, getting dinner ready, on to bath time, bedtime. And so on. Thank God for espresso. I knew what to expect because I’d returned to work from mat leave once before but there are still days I’m at a complete loss what to make for dinner to satisfy everyone.   I was in Boston to attend a conference last month and I entered Trader Joe’s to grab a bottle of water. I had five minutes to get in and out. In the span of those few seconds on the way to the cash register, I ended up grabbing a bottle of organic agave syrup, a store-brand brownies mix, and also a dry mix to make pumpkin bread. All told, I spent just a few bucks if you can believe it. I couldn’t believe my eyes. That would never happen in Toronto. Anything organic or foodie is going to set you back, as some of my dear readers will attest.   Cream cheese is a necessity in our household. When we run out, we go into panic mode. Even when my son won’t eat anything else, he will eat cream cheese on toast. I’m no different. I love cream cheese on my bagels, in my slow cooker chicken stew, in my fettuccine Alfredo, and especially in my pumpkin muffins from Starbucks. But you can’t get Starbucks’ pumpkin cream cheese muffins year-round and so whenever my craving hit when they were out of season, I was fresh out of luck. Until now. I’ve been searching for a comparable recipe but wasn’t satisfied until I came across this recipe from the Brown Eyed Baker blog.
