Salted Caramel Eggnog Fudge Brownies

Full disclaimer, I’ve been sick for about two months with various ailments and I’ve been less ambitious with my baking this year, which means I’m relying on a lot of tried-and-true goodies. These bars, which I made for a couple of potlucks last year, had a fantastic yield and were a big hit. So, I decided not to blog about it right after the fact, instead I decided to keep my blog for a more timely holiday post. Apologies for the fuzzy photo that doesn’t show clean lines. I nearly decided to skip the post because I didn’t have a great photo. Truth is, whenever I make something for a potluck for a group of people, I’m either scrambling to make it, or store it in a transportable container, so the photo often suffers. I decided to make this recipe because I never met a salted caramel recipe I didn’t like. I also, similarly, […]

Butterscotch Fluffernutter Krispy Bars

It’s been ages – like months – since I’ve felt comfortable sitting down doing nothing. But my dishwasher is whirring, the kids have been fed, I have leftovers for dinner, tomorrow’s lunches are packed, my work clothes picked. I really don’t have any excuse not to sit down and enjoy my Fortnum & Mason Earl Grey tea while it’s still hot. That’s a lie. I have a basket of laundry waiting to be folded. But I always have a laundry basket waiting to be folded. So I deserve this break, right? In any case, I made this ages ago. And I forgot what the recipe was so I hemmed and I hawed and I delayed blogging about anything. But after doing some online sleuthing, I realized I found it. Here it is if you decide to make it, and I think you will.  I also realized that I had some residual […]

Salted Caramel Apple Pie Bars

For the second year in a row, I took my two sons – and my dad – apple-picking just north of the city. The landscape is beautiful, everyone feels very self-sufficient and productive after bringing home the fruit they picked themselves, and there’s some grandpa bonding time too. This year, however, I was a bit more prepared. I knew I would need to pull some more apple recipes out of my hat because the apple sauce I made lovingly last year with the leftover apples just sat there taunting me. So when I saw this recipe for Salted Caramel Apple Pie Bars on Pinterest, I knew I’d be making it. I’m not really an apple pie kind of girl, to tell the truth. But… the salted caramel sold me. Substitutions: None Would I make this again? No, because, it was delicious when it came out of the oven but kind […]

Drunken blondies with pumpkin spice morsels and butterscotch chips

“The Back In The Day Bakery Cookbook” is one of my most beloved titles. I have dozens and dozens of cookbooks, and this one is the kind I reach for when I am looking for the ultimate recipe. So when my good friend and kindred spirit, Jenn, brought me a bag of pumpkin spice morsels I knew I had to use them in something fantadiddlytastic. I’m hit or miss when it comes to brownies, either they are too cake-y or too dry. Or cookie-like. They rarely hit the mark with me, so I usually choose to indulge my allotted calories elsewhere. But – a blondie? I can never resist a blondie. And this one is something special. The recipe below has been modified from the Drunk Blondies recipe from the Back In The Day Bakery Cookbook. Ingredients: 2 cups unbleached all-purpose flour 1 teaspoon baking powder 1/4 teaspoon fine sea […]

Christmas Magic Cookie Bar

“How do you say… De-groovy? How do you say… De-gorgeous? Oh la la, la la la la la la……..” Yes, this magic cookie bar recipe evokes, for me, the psychedelic, over-the-top music video for Dee-Lite’s Groove is in the Heart. (Which is also coincidentally the first album I ever purchased back when cassettes were still a thing.) If you still jam to this song like I do, or want to relive the music video for yourself, scroll down to the very end. Anywho, this dessert reminds me of this video because there is nothing quiet about it. Nothing subdued. It is pure, in-your-face, sugary sugar. So if colours and processed sugars offend you, I’ll look for you in the boring aisle. I made this for our annual Christmas Eve party. I usually like to try something new and this is one of three things I will be taking, alongside Paula […]

No-bake chocolate, macadamia and fig slices

Sometimes I want something a bit fudgey, dense, with a lot of bite. A cookie won’t do, a brownie is much too sweet. Cake, too fluffy. Something where I can taste the cocoa and the dark chocolate and really let the flavours develop long after I’ve swallowed. These chocolate, macadamia and fig slices fit the bill; they’re the perfect treat to have alongside a steaming cup of coffee when you want something small that will satisfy your sweet tooth. They’re small but the flavour packs a huge punch. And they’re a really elegant dessert to serve to guests when they show up unexpectedly. I always have some cookies on hand, but I hate it when they’re only my kids’ Oreos. I got this recipe from a great book called “Fireside Feasts & Snow Day Treats” (Ryland Peters & Small) but I played around with the ingredients a little bit to […]

Coconut Chocolate Chip Bars

This is the first recipe I tried from the new “The SoNo Baking Company Cookbook” and it’s a variation on the traditional magic cookie bar. According to the cookbook (read my review here), the recipe “features two distinct layers: the base, which consists of a brown sugar shortbread-like cookie crust, and the top layer, a rich, chewy oatmeal-coconut-chocolate-chip cookie. I made these bars one Friday night at the end of a long, long, long week after coming home tired from grocery shopping. It’s a mix-and-pour recipe that doesn’t involve much elbow grease or thought. Fortunately, this has no bearing on the end result – a scrumptious sweet sensation that will linger on your taste buds for days after the last crumbs are gone. I won’t copy and paste the recipe here due to copyright issues, but I will say it involves mixing butter, brown sugar, coarse salt, vanilla extract and […]

Caramel pecan cheesecake bars

This recipe is courtesy of Kraft Kitchens, I’ve made it time and time again when I’m in a bind for time and I’ve promised to bring dessert. It’s ideal for buffet-style parties, like baby showers and Christmas pot-luck dinners, because guests can grab the bars and eat them over a napkin. Ingredients: 1-1/2 cups graham crumbs 1 cup chopped pecans, divided 1/4 cup butter, melted 4 pkg. (250 g each) brick cream cheese, softened 1 cup sugar 1 cup sour cream 1 Tbsp. vanilla 4 eggs 1/4 cup caramel ice cream topping Directions: Preheat oven to 350°F. Line 13×9-inch baking pan with foil, with ends of foil extending over sides of pan. Grease foil. Mix graham crumbs, 1/2 cup of the pecans and the butter. Press firmly onto bottom of prepared pan. Beat cream cheese and sugar in large bowl with electric mixer on medium speed until well blended. Add […]
